Mississippi Mud Potatoes Recipe
Ingredients:
3–4 large russet potatoes, peeled and diced
1 tablespoon olive oil
Salt and pepper, to taste
1 teaspoon garlic powder
1 teaspoon smoked paprika (optional)
1½ cups shredded cheddar cheese
6 slices bacon, cooked and crumbled
½ cup sour cream
¼ cup mayonnaise (optional for creaminess)
2–3 green onions, chopped
Instructions:
1. Preheat oven to 400°F (200°C). Grease a 9x13-inch baking dish.
2. Prepare the potatoes: Toss diced potatoes with olive oil, salt, pepper, garlic powder, and paprika. Spread evenly in the baking dish.
3. Bake: Cover with foil and bake for 35–40 minutes, or until potatoes are fork-tender.
4. Mix in the goodness: Remove foil. Add cheese, bacon, sour cream, and mayo (if using). Mix gently to coat the potatoes.
5. Bake again: Return to oven uncovered for another 10–15 minutes, until cheese is melted and bubbly.
6. Top and serve: Sprinkle with green onions before serving.
