Slow Cooker Pot Roast Perfection
Ingredients
▶️ Beef & Seasoning:
3–4 lb beef chuck roast
1 tbsp olive oil
Salt and black pepper, to taste
1 tbsp garlic powder
1 tbsp onion powder
1 tsp dried thyme
▶️ Vegetables & Extras:
4–5 medium potatoes, cut into chunks
4 carrots, peeled and chopped
1 onion, sliced
3 cloves garlic, minced
2 cups beef broth
1 tbsp Worcestershire sauce
1 tbsp tomato paste (optional for extra richness)
1 bay leaf

Instructions
1. Prep & Sear:
Season roast on all sides with salt, pepper, garlic powder, onion powder, and thyme.
Heat olive oil in a skillet over medium-high heat. Sear roast on all sides until browned (about 2-3 minutes per side).
2. Layer the Slow Cooker:
Add potatoes, carrots, onions, and garlic to the bottom of your slow cooker.
Place seared roast on top of the veggies.
3. Add Liquids:
Mix beef broth, Worcestershire sauce, and tomato paste (if using). Pour over roast and veggies. Add bay leaf.
4. Cook Low & Slow:
Cover and cook on LOW for 8–10 hours or on HIGH for 4–6 hours, until the roast is fork-tender.
5. Serve & Enjoy:
Remove bay leaf. Shred roast slightly before serving with the cooked veggies and spoonfuls of that savory broth.
