Irish Sausage and Cabbage Stew

Ingredients:
1 lb Irish sausages (like bangers, or use bratwurst)
1 tbsp olive oil or butter
1 onion, chopped
2 cloves garlic, minced
3–4 medium potatoes, peeled and cubed
3 carrots, peeled and sliced
1/2 head green cabbage, chopped
4 cups chicken or vegetable broth
1 tsp dried thyme
1/2 tsp caraway seeds (optional, adds a nice depth)
Salt & black pepper to taste
Fresh parsley for garnish

Instructions:
1. Brown the sausages: In a large pot or Dutch oven, heat oil over medium heat. Brown the sausages until golden on the outside (they don’t need to be fully cooked). Remove and set aside.
2. Sauté the veggies: In the same pot, sauté onions and garlic for 2–3 minutes. Add carrots and potatoes, cook for another 5 minutes.
3. Add cabbage & spices: Stir in chopped cabbage, thyme, caraway seeds (if using), salt, and pepper.
4. Return sausages & add broth: Slice sausages if you like, or leave whole. Return them to the pot. Pour in broth and bring to a simmer.
5. Simmer: Cover and cook over low heat for 35–45 minutes, until veggies are tender and flavors meld together.
6. Taste & serve: Adjust seasoning, garnish with chopped parsley, and serve hot with crusty bread or soda bread.
