Amish Applesauce Cake
Ingredients:
1½ cups all-purpose flour
1 tsp baking soda
½ tsp baking powder
1 tsp ground cinnamon
½ tsp ground nutmeg
½ cup applesauce
½ cup granulated sugar
½ cup brown sugar (optional but adds richness)
½ cup vegetable oil (or melted butter)
1 large egg
1 tsp vanilla extract
½ cup chopped nuts or raisins (optional)

Instructions:
1. Preheat oven to 350°F (175°C). Grease and flour an 8-inch square baking pan or line it with parchment paper.
2. Mix dry ingredients:
In a medium bowl, whisk together the flour, baking soda, baking powder, cinnamon, and nutmeg.
3. Combine wet ingredients:
In a large bowl, whisk together the applesauce, granulated sugar, brown sugar (if using), oil, egg, and vanilla until smooth.
4. Combine and fold:
Gradually add the dry ingredients into the wet mixture. Stir until just combined. Fold in nuts or raisins if desired.
5. Bake:
Pour the batter into the prepared pan. Bake for 30–35 minutes, or until a toothpick inserted in the center comes out clean.
6. Cool and serve:
Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely. Serve plain or dust with powdered sugar.
