Mexican White Trash Casserole
Ingredients:
1 pound ground beef
1 can (15 ounces) black beans, drained and rinsed
1 can (15 ounces) corn, drained
1 can (10 ounces) diced tomatoes with green chilies (like Rotel), undrained
1 package (8 ounces) cream cheese, softened
1 teaspoon taco seasoning (optional, for extra flavor)
1 cup shredded cheddar cheese (or Mexican blend)
Crushed tortilla chips (for topping)
Optional garnishes: sour cream, green onions, jalapeños, cilantro

Instructions:
1. Preheat oven to 350°F (175°C). Lightly grease a 9x13-inch baking dish.
2. Cook the ground beef in a large skillet over medium heat until browned and fully cooked. Drain excess grease.
3. Stir in black beans, corn, and diced tomatoes with green chilies (with the liquid). Mix well and let simmer for 2–3 minutes.
4. Add cream cheese to the skillet and stir until melted and fully combined. Add taco seasoning if using. Remove from heat.
5. Pour the mixture into the prepared baking dish and spread evenly.
6. Sprinkle shredded cheese over the top.
7. Bake uncovered for 15–20 minutes, or until cheese is melted and bubbly.
8. Top with crushed tortilla chips just before serving for added crunch.
9. Garnish as desired with sour cream, chopped green onions, jalapeños, or fresh cilantro.
