Spicy Korean BBQ Meatloaf



🔥 Spicy Korean BBQ Meatloaf


🥩 Ingredients:


For the Meatloaf:


1 ½ lbs ground beef (80/20) or half beef, half ground pork


1 cup panko breadcrumbs


½ cup milk


2 eggs


4 green onions, finely chopped


1 small onion, finely diced


3 cloves garlic, minced


1 tablespoon grated ginger


¼ cup gochujang (Korean chili paste)


2 tablespoons soy sauce


1 tablespoon sesame oil


1 tablespoon brown sugar


1 teaspoon salt


½ teaspoon black pepper



For the Korean BBQ Glaze:


¼ cup ketchup


2 tablespoons gochujang


1 tablespoon soy sauce


1 tablespoon honey or brown sugar


1 teaspoon sesame oil


1 teaspoon rice vinegar (optional for tang)

🔧 Instructions:


1. Prep: Preheat your oven to 375°F (190°C). Line a baking sheet or loaf pan with parchment paper or lightly grease it.



2. Soak breadcrumbs: In a large bowl, combine panko and milk. Let it soak for 5 minutes.



3. Mix meatloaf: Add the ground meat, eggs, green onions, onion, garlic, ginger, gochujang, soy sauce, sesame oil, brown sugar, salt, and pepper. Mix just until combined—don’t overwork it.



4. Shape & Bake: Form into a loaf on the baking sheet or press into a loaf pan. Bake uncovered for 35–40 minutes.



5. Make glaze: While it bakes, mix all glaze ingredients in a small bowl.



6. Glaze & Finish Baking: After 35–40 minutes, remove meatloaf from oven. Spread glaze over the top. Return to oven and bake for 15 more minutes, or until internal temp reaches 160°F (71°C).



7. Rest & Serve: Let it rest for 10 minutes before slicing. Garnish with sesame seeds and chopped green onions if desired.
