🌶️ Spicy Pineapple Jalapeño Chutney
Ingredients:
2 cups fresh pineapple, finely chopped
2–3 jalapeños, finely chopped (adjust to heat preference)
1/2 small red onion, finely chopped
1 tablespoon fresh ginger, grated
2 cloves garlic, minced
1/2 cup apple cider vinegar
1/3 cup brown sugar (light or dark)
1/4 teaspoon ground allspice
1/4 teaspoon ground cinnamon
1/4 teaspoon salt
Zest and juice of 1 lime
Optional: 1/4 teaspoon crushed red pepper flakes for extra heat
Instructions:
1. Sauté Aromatics: In a saucepan over medium heat, add a drizzle of oil and sauté the onion, jalapeños, garlic, and ginger for 3–4 minutes, until softened.
2. Add Remaining Ingredients: Stir in the chopped pineapple, vinegar, brown sugar, spices, salt, and lime zest/juice.
3. Simmer: Bring to a boil, then reduce heat and simmer uncovered for 25–35 minutes, stirring occasionally, until thickened and jammy.
4. Taste & Adjust: Taste and adjust sweetness or heat. If too spicy, add a little more sugar or a splash of pineapple juice.
5. Cool & Store: Let cool completely. Store in a sealed jar in the fridge for up to 2 weeks.
