Ingredients:

Main Ingredients:

  • 1 lb ground beef
  • 1 medium onion, chopped
  • 1 cup carrots, sliced
  • 1 cup celery, sliced
  • 1 cup frozen peas
  • 2 cups cooked egg noodles
  • 1 can (10.5 oz) cream of mushroom soup
  • ½ cup milk
  • 1 cup shredded cheddar cheese, divided

👩‍🍳 Instructions:

  1. Preheat oven to 350°F (175°C). Grease a 9x13-inch baking dish.

  2. Brown the beef:
    In a large skillet over medium heat, cook the ground beef and chopped onion until the beef is browned and the onion is soft. Drain excess grease.

  3. Add vegetables:
    Add the sliced carrots and celery to the skillet. Cook for about 5–6 minutes until they begin to soften. Stir in the frozen peas and cook for another 2 minutes.

  4. Combine ingredients:
    In a large bowl, mix together the cream of mushroom soup and milk until smooth. Stir in ½ cup of the shredded cheddar cheese.

  5. Assemble the casserole:
    Add the cooked noodles and the beef/vegetable mixture to the soup mixture. Stir until everything is well combined.

  6. Transfer to baking dish:
    Pour the mixture into the prepared casserole dish. Spread evenly.

  7. Top with cheese:
    Sprinkle the remaining ½ cup of shredded cheddar cheese over the top.

  8. Bake:
    Cover with foil and bake for 25–30 minutes. Remove foil and bake an additional 5–10 minutes, or until bubbly and golden on top.

  9. Serve hot:
    Let sit for 5 minutes before serving. Enjoy with a slice of crusty bread or a side salad!


🍴 Tips:

  • Swap peas for corn or green beans if preferred.
  • Use cream of chicken or celery soup instead of mushroom for a twist.
  • You can prep this casserole a day ahead and bake when ready.
