🧀 Cheesy Mashed Potato Puffs
Golden, fluffy potato bites loaded with cheese and baked to perfection in a muffin pan!
🧂 Ingredients:
2 cups cold mashed potatoes (leftovers work great!)
1 cup shredded cheddar cheese (or your favorite cheese)
2 large eggs
¼ cup grated Parmesan cheese
2 tbsp chopped green onions (optional)
Salt & pepper to taste
Nonstick cooking spray or butter (for greasing the pan)
👩🍳 Instructions:
1. Preheat Oven
Preheat your oven to 400°F (200°C).
Generously grease a 12-cup muffin pan with nonstick spray or butter.
2. Mix the Ingredients
In a large bowl, combine mashed potatoes, cheddar cheese, eggs, Parmesan, green onions, salt, and pepper.
Mix until everything is well combined and smooth.
3. Spoon into Muffin Pan
Fill each muffin cup with the potato mixture, pressing down slightly and mounding just a bit on top.
Optionally, sprinkle extra cheese or breadcrumbs on top for a crispy finish.
4. Bake
Bake for 20–25 minutes, or until golden brown and slightly crisp on top.
5. Cool & Serve
Let cool in the pan for 5 minutes, then gently run a knife around the edges and pop them out.
Serve warm with sour cream, ranch, or ketchup for dipping.
🧁 Tips:
Add chopped cooked bacon or ham for extra flavor.
Use a mini muffin pan for bite-sized puffs — reduce baking time to 15–18 minutes.
These freeze well! Reheat in a toaster oven or air fryer.
