🦐 Sautéed Shrimp with Spinach
Tender shrimp sautéed in garlic and olive oil, tossed with wilted spinach — ready in under 20 minutes!
📝 Ingredients:
1 lb shrimp, peeled and deveined
4 cups fresh spinach, washed
3 cloves garlic, minced
2 tbsp olive oil
1 tbsp butter (optional, for richness)
¼ tsp red pepper flakes (optional)
Salt & black pepper to taste
Juice of ½ lemon (optional)
👩🍳 Instructions:
1. Prep the Shrimp
Pat shrimp dry with paper towels. Season lightly with salt and pepper.
2. Sauté Garlic
In a large skillet, heat olive oil over medium heat.
Add garlic and red pepper flakes (if using); sauté for about 30 seconds until fragrant.
3. Cook the Shrimp
Add shrimp to the skillet in a single layer.
Cook 2–3 minutes per side until pink and opaque.
Transfer cooked shrimp to a plate and set aside.
4. Wilt the Spinach
In the same pan, add butter (if using) and toss in the spinach.
Sauté for 1–2 minutes until just wilted. Season with a pinch of salt.
5. Combine and Finish
Return shrimp to the skillet.
Squeeze lemon juice over the top, stir everything gently, and remove from heat.
6. Serve Immediately
Delicious with rice, pasta, quinoa, or just as-is!

Add cherry tomatoes or mushrooms for variety.
For extra flavor, deglaze the pan with a splash of white wine before wilting the spinach.
