✅ Ingredients:


2 cups mashed potatoes (leftover or freshly made, cooled)

1 large egg

1 cup shredded sharp cheddar cheese

1/4 cup grated Parmesan cheese

1/4 cup chopped green onions (optional)

2 tablespoons sour cream

Salt and black pepper to taste

Butter or nonstick spray (for greasing muffin tin)

1. Prep the Oven & Pan

Preheat your oven to 400°F (200°C).

Grease a mini muffin tin with butter or spray to prevent sticking.

2. Mix the Ingredients

In a large bowl, combine:

Mashed potatoes

Egg

Cheddar cheese

Parmesan cheese

Green onions (if using)

Sour cream

Salt & pepper

Mix until everything is well blended.

3. Scoop into Muffin Tin

Spoon the mixture into the greased mini muffin cups, filling each almost to the top.

Use a spoon to smooth and slightly press them down.

4. Bake

Bake for 25–30 minutes, or until the tops are golden and crispy.
