🍽️ Easy Chicken Stroganoff
✅ Ingredients:
1 lb (450g) boneless, skinless chicken breasts or thighs, cut into bite-sized pieces
1 tablespoon olive oil
1 tablespoon butter
1 small onion, finely chopped
2 cloves garlic, minced
8 oz (225g) mushrooms, sliced
1 teaspoon paprika
Salt & pepper, to taste
1 tablespoon all-purpose flour (optional, for thickening)
1 cup chicken broth
1/2 cup sour cream
1 teaspoon Dijon mustard (optional)
Fresh parsley, chopped (for garnish)
👩🍳 Instructions:
1. Cook Chicken
Heat olive oil in a large skillet over medium heat.
Add chicken pieces, season with salt, pepper, and paprika. Cook until browned and cooked through. Remove and set aside.
2. Sauté Veggies
In the same skillet, melt butter.
Add onions and garlic, cook for 2 minutes.
Add mushrooms and sauté until tender and golden, about 5–6 minutes.
3. Make the Sauce
Sprinkle flour (if using) over the mushrooms and stir for 1 minute.
Pour in chicken broth, scraping up any browned bits. Simmer 2–3 minutes until slightly thickened.
4. Finish the Stroganoff
Reduce heat to low. Stir in sour cream and Dijon mustard until smooth.
Return chicken to the pan and simmer until heated through—about 3–4 minutes. Adjust salt and pepper.
5. Serve
Serve hot over egg noodles, rice, or mashed potatoes. Garnish with chopped parsley.
🍄 Optional Add-ins:
A splash of white wine for extra flavor (before adding broth)
Spinach or peas for added greens
