Cheesy Taco Potatoes



🌮 Cheesy Taco Potatoes 🧀🥔


Ingredients:


1 pound lean ground beef


4 to 6 medium Russet potatoes


1 packet (1 oz) taco seasoning mix


½ cup water


1 cup shredded cheddar cheese (or more if you love it cheesy!)


Optional toppings: sour cream, chopped green onions, diced tomatoes, jalapeños, salsa, or guacamole

Instructions:


1. Preheat oven to 400°F (200°C).

Wash and scrub the potatoes. Pierce with a fork and place on a baking sheet. Bake for 45–60 minutes, or until tender. (Alternatively, microwave potatoes for quicker prep — 5–8 minutes each.)



2. While potatoes bake, cook the ground beef in a large skillet over medium heat until browned. Drain any excess fat.



3. Add taco seasoning and ½ cup water to the cooked beef. Stir and simmer for 3–5 minutes, or until thickened.



4. Once potatoes are done, slice each one open and gently fluff the insides with a fork.



5. Spoon the taco meat over each potato. Sprinkle generously with shredded cheddar cheese.



6. Return to oven for 5–10 minutes, or until cheese is melted and bubbly.



7. Serve hot with your favorite taco toppings like sour cream, green onions, salsa, or avocado.


Tips:


Swap ground beef for ground turkey or black beans for a lighter or vegetarian version.


Want extra flavor? Drizzle with nacho cheese or spicy queso before serving.
