Swedish Apple Cake

Ingredients:
½ cup butter, room temperature
1 ⅔ cups granulated sugar
2 large eggs
1 ½ teaspoons vanilla extract
1 ½ cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
1 ½ teaspoons ground cinnamon
3 cups peeled and diced apples (Granny Smith or Honeycrisp work well)
Optional: ½ cup chopped walnuts or pecans
Optional topping: Powdered sugar or a drizzle of vanilla glaze

Instructions:
1. Preheat oven to 350°F (175°C).
Grease and flour a 9x13-inch baking dish or a 9-inch round springform pan.
2. Cream the butter and sugar together in a large bowl until light and fluffy (about 2–3 minutes).
3. Add eggs one at a time, beating well after each addition. Stir in vanilla.
4. In a separate bowl, whisk together the flour, baking soda, salt, and cinnamon.
5. Gradually add the dry ingredients to the wet mixture, mixing just until combined.
6. Fold in the diced apples (and nuts if using). The batter will be thick.
7. Spread batter evenly in the prepared pan.
8. Bake for 40–50 minutes, or until a toothpick inserted in the center comes out clean.
9. Cool in the pan for at least 15 minutes. Serve warm or at room temperature.
10. Optional: Dust with powdered sugar or drizzle with vanilla glaze before serving.
