๐ฅ Creamy Chicken and Carrot Spread
A simple, wholesome, and flavorful spread you’ll want to make again and again!
✅ Ingredients:
1½ cups cooked shredded chicken (rotisserie works great)
1 medium carrot, finely grated
½ cup mayonnaise (or Greek yogurt for a lighter version)
1 tbsp cream cheese, softened (optional, for richness)
1 tsp lemon juice or apple cider vinegar
1 tsp Dijon mustard (optional, for a tangy kick)
Salt and black pepper, to taste
Optional: chopped parsley or chives for freshness
Optional add-ins: 1 small grated garlic clove or pinch of paprika

1. Shred & Grate
In a mixing bowl, combine the shredded chicken and grated carrot.
2. Mix the Creamy Base
In a separate bowl, whisk together the mayonnaise, cream cheese, lemon juice, and mustard (if using) until smooth.
3. Combine & Season
Add the creamy mixture to the chicken and carrots. Stir well to combine. Season with salt, pepper, and any herbs or spices you like.
4. Chill
Refrigerate for at least 20–30 minutes for flavors to meld.
5. Serve & Enjoy
Serve with crackers, on toasted bread, in lettuce cups, or as a filling for sandwiches
