๐ฅ๐ค Creamy Cucumber Shrimp Salad ๐ฅ๐ค
Ingredients
For the Salad:
1 lb (450g) cooked shrimp, peeled and deveined
2 large cucumbers, thinly sliced
1 cup cherry tomatoes, halved
1/4 red onion, very thinly sliced (optional)
2 tablespoons fresh dill, chopped (or 1 tsp dried)
For the Dressing:
1/2 cup sour cream or plain Greek yogurt
2 tablespoons mayonnaise
1 tablespoon lemon juice (freshly squeezed)
1 teaspoon Dijon mustard (optional for tang)
Salt and black pepper, to taste
1 garlic clove, minced (optional)
Instructions
1. Prep the vegetables
Slice cucumbers thinly (use a mandoline if you have one). Halve cherry tomatoes and slice red onion if using.
2. Mix the dressing
In a small bowl, whisk together the sour cream, mayo, lemon juice, Dijon mustard, garlic (if using), salt, and pepper.
3. Combine the salad
In a large bowl, gently toss the shrimp, cucumbers, tomatoes, and onion with the dressing until evenly coated.
4. Add dill & chill
Fold in chopped dill, cover the salad, and refrigerate for at least 30 minutes to allow flavors to blend.
5. Serve
Stir gently before serving. Delicious on its own, over greens, or with crusty bread!
✅ Tips
For extra crunch, add a handful of chopped celery or radishes.
If you're watching calories, go heavier on the Greek yogurt and lighter on the mayo.
