🥔 Fried Potatoes and Onions Recipe
Ingredients:
1½ pounds potatoes (Yukon Gold or Russet work best), peeled and thinly sliced
1 large onion, thinly sliced
2–3 tablespoons butter or vegetable oil (or a mix of both)
½ teaspoon salt (adjust to taste)
½ teaspoon black pepper
(Optional) ½ teaspoon garlic powder
(Optional) ¼ teaspoon smoked paprika
(Optional) Fresh or dried parsley for garnish

🔥 Instructions:
1. Prep the potatoes and onions:
Peel the potatoes and slice them thin (about ¼-inch thick). Slice the onion thin as well.
2. Heat the skillet:
In a large skillet (preferably cast iron), heat the butter or oil over medium heat.
3. Cook the onions:
Add the sliced onions to the skillet first and sauté for 2–3 minutes until just starting to soften and become fragrant.
4. Add the potatoes:
Add the sliced potatoes evenly across the skillet. Let them cook undisturbed for 4–5 minutes to develop a nice golden crust.
5. Season:
Sprinkle with salt, pepper, and any optional seasonings like garlic powder or paprika.
6. Flip & stir occasionally:
Continue cooking for about 20–25 minutes, flipping and stirring every 4–5 minutes. Add more butter or oil if needed to keep things from sticking. You want the potatoes tender inside and crispy outside.
7. Finish & serve:
Once the potatoes are golden brown and fork-tender, remove from heat. Garnish with chopped parsley if desired.
