🫙 Old-Fashioned Chow Chow Relish
A sweet and tangy pickled relish made with cabbage, green tomatoes, onions, and peppers. Great for canning or enjoying fresh!
🧺 Ingredients:
1 medium head green cabbage, finely chopped (about 8 cups)
6 green tomatoes, finely chopped
6 medium onions, chopped
3 green bell peppers, chopped
3 red bell peppers, chopped
1/4 cup pickling salt or kosher salt
3 cups white vinegar (5% acidity)
2 cups granulated sugar
1 tablespoon mustard seeds
1 tablespoon celery seeds
1 teaspoon turmeric
1 teaspoon ground ginger (optional)
1/2 teaspoon red pepper flakes (optional, for heat)
🥄 Instructions:
1. Prep the Vegetables
Finely chop all vegetables (a food processor works great).
Place everything in a large bowl and sprinkle with the pickling salt.
Toss well, cover, and refrigerate overnight (or at least 8 hours). This draws out excess water.
2. Drain & Rinse
The next day, drain the vegetables well and rinse with cold water.
Squeeze out as much liquid as possible using a clean towel or cheesecloth.
3. Cook the Relish
In a large stockpot, combine the vinegar, sugar, mustard seed, celery seed, turmeric, and optional spices.
Bring to a boil, stirring until sugar dissolves.
Add drained vegetables and return to a simmer.
Simmer uncovered for 30–40 minutes, stirring occasionally, until slightly thickened.
4. Can or Store
To can: While hot, pack into sterilized jars, leaving ½ inch headspace. Wipe rims, seal with lids, and process in a boiling water bath for 10 minutes (adjust for altitude).
To store fresh: Let cool, then refrigerate in airtight containers. Lasts up to 2–3 months in the fridge.
