2 (8 oz) packages cream cheese, softened
1 can (8 oz) crushed pineapple, drained very well
1 cup finely chopped green bell pepper (optional – adds crunch and color)
1/2 cup finely chopped green onions
1 tsp garlic powder (optional)
1/2 tsp salt
1/4 tsp black pepper
1 cup chopped pecans or walnuts (to coat the outside)

π₯ Instructions:
1. Prep the Pineapple:
Drain the crushed pineapple very well using a fine mesh strainer or press between paper towels. Too much moisture will make the cheeseball soft and sticky.
2. Make the Cheeseball Mixture:
In a large mixing bowl, combine softened cream cheese, drained pineapple, chopped bell pepper (if using), green onions, garlic powder, salt, and black pepper.
Mix everything together until smooth and well incorporated.
3. Form the Ball:
Scoop the mixture onto a large piece of plastic wrap and shape it into a ball.
Wrap tightly and refrigerate for at least 2 hours (or overnight) until firm.
4. Add the Nut Coating:
Once chilled and firm, remove the cheeseball from the wrap and roll it in chopped pecans or walnuts until fully coated.
5. Serve:
Place on a serving platter with crackers, pretzels, or veggie sticks. Garnish with a few pineapple tidbits or extra green onions if desired.

You can make the cheeseball up to 2 days in advance. Just roll it in nuts right before serving so they stay crunchy.
