🍤 Spicy Shrimp & Avocado Rice Bowl
🛒 Ingredients
For the Shrimp:
1 lb (450g) shrimp, peeled and deveined
1 tablespoon olive oil
2 teaspoons chili powder
1 teaspoon smoked paprika
1/2 teaspoon garlic powder
1/4 teaspoon cayenne pepper (adjust to taste)
Salt & pepper to taste
Juice of 1/2 lime
For the Bowl:
2 cups cooked rice (white, brown, or jasmine)
1 ripe avocado, sliced or diced
1/4 cup red onion, thinly sliced
1/2 cup cherry tomatoes, halved
1/4 cup fresh cilantro, chopped
Lime wedges for serving
Optional Toppings:
Sriracha or spicy mayo
Crumbled feta or cotija cheese
Pickled jalapeños
Corn kernels or black beans

🔥 Instructions
1️⃣ Cook the Rice
Prepare 2 cups of rice according to package instructions. Keep warm.
2️⃣ Season & Cook the Shrimp
In a bowl, toss shrimp with olive oil, chili powder, paprika, garlic powder, cayenne, salt, pepper, and lime juice.
Heat a skillet over medium-high heat. Add shrimp and cook 2–3 minutes per side, until pink and opaque. Remove from heat.
3️⃣ Assemble the Bowl
Divide warm rice into bowls.
Top with shrimp, avocado slices, red onion, tomatoes, and cilantro.
Drizzle with sriracha or spicy mayo if desired.
Serve with lime wedges and optional toppings.
🥑 Tips
Want extra creaminess? Add a dollop of Greek yogurt or sour cream.
