4 cups sliced fresh peaches (or 2 cans, drained)
¾ cup granulated sugar
¼ cup brown sugar
1 tsp lemon juice
1 tsp vanilla extract
1 tsp ground cinnamon
1 tbsp cornstarch (for thickening)
For the batter:
1 cup all-purpose flour
1 cup granulated sugar
2 tsp baking powder
¼ tsp salt
1 cup milk
½ tsp vanilla extract
½ cup (1 stick) unsalted butter, melted

1. Preheat oven to 350°F (175°C).
2. Make the filling:
In a saucepan over medium heat, combine peaches, sugars, lemon juice, vanilla, cinnamon, and cornstarch.
Cook for 5–7 minutes until bubbly and slightly thickened. Remove from heat.
3. Make the batter:

Add milk and vanilla. Stir just until combined.
4. Assemble:
Pour melted butter into a 9x13-inch baking dish.
Pour batter over the butter — do not stir.
Spoon the peach mixture evenly over the batter — again, do not stir.
5. Bake for 40–45 minutes, or until the top is golden brown and crispy on the edges.
6. Cool slightly and serve warm — best with a scoop of vanilla ice cream! 🍨
