🥣 Easy Crab and Corn Chowder
Ingredients:
2 tbsp butter
1 medium onion, chopped
2 celery stalks, chopped
2 garlic cloves, minced
2 cups corn kernels (fresh, frozen, or canned & drained)
2 medium potatoes, peeled & diced
3 cups chicken or seafood stock
1 cup heavy cream (or half-and-half for lighter)
1 lb lump crab meat (imitation crab works too)
½ tsp paprika
Salt & black pepper to taste
Fresh parsley or chives (for garnish)
Instructions:
1. Sauté veggies
In a large pot, melt butter over medium heat. Add onion, celery, and garlic. Cook until softened (about 5 minutes).
2. Add potatoes & corn
Stir in potatoes and corn. Cook for another 2 minutes.
3. Add stock & simmer
Pour in the chicken/seafood stock. Bring to a boil, then reduce heat and simmer for about 15 minutes, until potatoes are tender.
4. Make it creamy
Stir in cream, paprika, salt, and pepper. Simmer gently for 5 minutes.
5. Add crab
Gently fold in crab meat. Simmer another 2–3 minutes—just until heated through.
6. Serve
Ladle into bowls, sprinkle with parsley or chives, and enjoy!
