🥘 Ground Turkey & Potato Skillet
Ingredients:
1 lb ground turkey
3 medium potatoes, diced (Yukon Gold or Russet work well)
1 small onion, diced
1 bell pepper, diced (optional)
2 cloves garlic, minced
1 tsp smoked paprika
½ tsp garlic powder
½ tsp dried oregano
Salt & black pepper, to taste
2 tbsp olive oil or butter
¼ cup shredded cheese (optional)
Fresh parsley or green onions for garnish
Instructions:
1. Cook the potatoes:
In a large skillet, heat 1 tbsp oil over medium heat.
Add diced potatoes, season lightly with salt and pepper.
Cook uncovered, stirring occasionally, for 10–12 minutes until golden and tender. Remove and set aside.
2. Cook the turkey mixture:
In the same skillet, add remaining oil and sauté onion and bell pepper until softened (about 3–4 minutes).
Add ground turkey and garlic. Cook until browned and fully cooked, breaking it up with a spoon.
Season with paprika, garlic powder, oregano, salt, and pepper.
3. Combine & finish:
Return the cooked potatoes to the skillet.
Stir everything together and cook for another 2–3 minutes to blend the flavors.
(Optional) Sprinkle with shredded cheese and cover until melted.
4. Serve:
Garnish with chopped parsley or green onions.
Enjoy as-is or serve with a fried egg on top for a breakfast-style version.
