Pistachio Puppy Chow
Ingredients:
6 cups Rice Chex cereal
1 cup white chocolate chips (or vanilla almond bark)
1/2 cup pistachio butter (or finely ground pistachios mixed with a bit of oil to make a paste)
1/4 cup unsalted butter
1 tsp vanilla extract
1 1/2 cups powdered sugar
1/2 cup finely chopped pistachios (plus extra for garnish)
Optional: 1 box pistachio pudding mix (3.4 oz) for extra pistachio flavor
Instructions:
1. Prep coating: In a microwave-safe bowl, melt the white chocolate chips, pistachio butter, and butter together in 30-second bursts, stirring until smooth. Stir in vanilla.
2. Mix with cereal: Place Chex cereal in a large bowl. Pour melted pistachio mixture over the cereal. Gently stir until well-coated.
3. Shake & coat: In a large zip-top bag, combine powdered sugar, pistachio pudding mix (if using), and chopped pistachios. Add coated cereal, seal, and shake until everything is evenly covered.
4. Cool & serve: Spread on a parchment-lined baking sheet to cool and dry. Sprinkle with extra pistachios before serving.
💡 Tips:
The pudding mix makes it extra green and flavorful, but you can skip it if you prefer all-natural.
Store in an airtight container at room temperature for up to 5 days (if it lasts that long!).
