Blueberry Biscuits
Ingredients:
2 cups all-purpose flour
1 tbsp baking powder
1/2 tsp salt
2 tbsp sugar
1/2 cup cold butter (cut into cubes)
3/4 cup milk (or buttermilk for extra tenderness)
1 cup fresh or frozen blueberries
Optional glaze:
1/2 cup powdered sugar
2–3 tsp milk
1/2 tsp vanilla extract
Instructions:
1. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
2. Mix dry ingredients: In a large bowl, whisk together flour, baking powder, salt, and sugar.
3. Cut in butter: Using a pastry cutter or your fingers, cut in the cold butter until mixture looks like coarse crumbs.
4. Add milk: Pour in milk and stir just until dough comes together (don’t overmix).
5. Fold in blueberries gently so they don’t burst too much.
6. Shape biscuits: Drop by large spoonfuls (or use a biscuit cutter) onto the baking sheet.
7. Bake for 15–18 minutes, until golden on top.
8. Glaze (optional): Mix powdered sugar, milk, and vanilla, then drizzle over warm biscuits.
💡 Tips:
If using frozen blueberries, don’t thaw them first—toss them lightly in flour before folding in to prevent streaking.
These are amazing served warm with a pat of butter or a drizzle of honey.
