Tuscan Garlic Salmon Skillet with Spinach & Tomato
Ingredients (Serves 4)
4 salmon fillets (about 6 oz each, skin-on or skinless)
2 tbsp olive oil
Salt & pepper, to taste
4 garlic cloves, minced
1 cup cherry tomatoes, halved
2 cups fresh spinach
½ cup heavy cream
½ cup chicken or vegetable broth
½ cup grated Parmesan cheese
1 tsp Italian seasoning
1/2 tsp red pepper flakes (optional)
1 tbsp lemon juice
Fresh basil, for garnish
Instructions
1. Sear the Salmon
1. Pat salmon fillets dry with paper towels and season both sides with salt and pepper.
2. Heat olive oil in a large skillet over medium-high heat.
3. Place salmon skin-side up and sear for 4 minutes, flip, and cook another 3–4 minutes or until cooked through. Remove salmon and set aside.
2. Make the Tuscan Garlic Sauce
1. In the same skillet, reduce heat to medium. Add minced garlic and sauté for 30 seconds until fragrant.
2. Add cherry tomatoes and cook for 2 minutes until they start to soften.
3. Stir in spinach and cook until just wilted.
4. Pour in heavy cream, broth, Parmesan, Italian seasoning, and red pepper flakes (if using). Stir until cheese melts and sauce thickens (about 3–4 minutes).
3. Combine & Serve
1. Return salmon to the skillet, spooning sauce over the top.
2. Drizzle with lemon juice, garnish with fresh basil, and serve immediately.
💡 Serving idea: This pairs beautifully with garlic butter pasta, mashed potatoes, or crusty bread to soak up all that creamy sauce.
