Ingredients:
6 cups potatoes, peeled and diced
1 small onion, diced
3 cloves garlic, minced
6 slices bacon, cooked and crumbled (reserve some for topping)
4 cups chicken broth
1 teaspoon salt
½ teaspoon black pepper
½ teaspoon smoked paprika (optional)
1 cup heavy cream (or half-and-half)
1 cup shredded cheddar cheese (optional, for extra creaminess)
2 tablespoons butter
2 tablespoons flour (for thickening, optional)
½ cup sour cream (for added richness)
Green onions or chives for garnish
Instructions:
1. Add to Crockpot: Place potatoes, onion, garlic, bacon, chicken broth, salt, pepper, and smoked paprika in the slow cooker.
2. Cook: Cover and cook on LOW for 6-7 hours or HIGH for 3-4 hours until potatoes are fork-tender.
3. Thicken the soup (optional): Mash some of the potatoes in the crockpot to make it thicker. If using flour, melt butter in a small pan, whisk in flour, then stir it into the soup.
4. Add cream & cheese: Stir in heavy cream, shredded cheese (if using), and sour cream. Let it warm for another 10-15 minutes.
