Homemade Brown Sugar Meatloaf
Ingredients:
½ cup brown sugar
½ cup ketchup
1½ pounds ground beef (or a mix of beef and pork)
¾ cup milk
2 eggs, beaten
1½ teaspoons salt
¼ teaspoon ground black pepper
1 small onion, finely chopped
¼ teaspoon ground ginger (optional, for a slight warmth)
¾ cup dry bread crumbs
Instructions:
1. Preheat Oven to 350°F (175°C).
2. Prepare the Pan: Lightly grease a loaf pan and spread the brown sugar evenly on the bottom. Then, spread half of the ketchup over the brown sugar.
3. Mix Meatloaf: In a large bowl, combine ground beef, milk, beaten eggs, salt, pepper, chopped onion, ginger (if using), and bread crumbs. Mix until just combined—don't overwork it!
4. Shape & Bake: Press the meat mixture into the loaf pan over the brown sugar and ketchup layer. Spread the remaining ketchup on top.
5. Bake for 1 Hour. Let it rest for 5-10
