Pan-Seared Cod in White Wine Tomato Basil Sauce recipe:
Ingredients:
For the cod:
1. 4 cod fillets (6 oz each)
2. Salt and pepper, to taste
3. 2 tbsp olive oil
For the sauce:
1. 2 tbsp olive oil
2. 1 onion, diced
3. 3 cloves garlic, minced
4. 1 cup white wine (dry)
5. 1 cup diced tomatoes (fresh or canned)
6. 1/4 cup chopped fresh basil
7. 2 tbsp butter
8. Salt and pepper, to taste
Instructions:
1. Season cod with salt and pepper.
2. Pan-sear cod in olive oil until cooked through (3-4 minutes per side).
3. For the sauce, sauté onion and garlic in olive oil until softened.
4. Add white wine; simmer until reduced by half.
5. Add diced tomatoes and basil; simmer 2-3 minutes.
6. Stir in butter until melted.
7. Serve sauce over pan-seared cod.
Tips:
1. Use fresh cod for best flavor.
2. Don't overcook cod.
3. Adjust sauce seasoning to taste.
