🌶️ Stuffed Pepper Soup (Easy Recipe)
Ingredients
1 lb ground beef (or turkey)
1 medium onion, chopped
2 bell peppers (1 green, 1 red), diced
3 garlic cloves, minced (optional)
1 can (15 oz) diced tomatoes
1 can (15 oz) tomato sauce
4 cups beef broth (or chicken/vegetable)
1 cup cooked white rice (or brown rice)
1 tsp Italian seasoning
1 tsp salt (or to taste)
½ tsp black pepper
½ tsp paprika (optional)
Instructions
1. Cook the meat
In a large pot, brown the ground beef over medium heat until no longer pink. Drain excess fat
2. Add vegetables
Stir in onion and bell peppers. Cook 5 minutes until softened. Add garlic and cook 1 more minute.
3. Add liquids & seasoning
Stir in diced tomatoes, tomato sauce, broth, Italian seasoning, salt, pepper, and paprika.
4. Simmer
Bring to a boil, then reduce heat and simmer for 20–25 minutes, stirring occasionally.
5. Add rice
Stir in cooked rice and let simmer another 5 minutes.
6. Serve
Taste and adjust seasoning. Serve hot, optionally topped with shredded cheese or parsley.
