Country Ranch Green Beans ‘n Potatoes with Bacon
Ingredients:
- 1 pound fresh green beans, trimmed
- 1 ½ pounds baby potatoes (red or Yukon gold), halved or quartered
- 6 slices bacon, cooked and crumbled
- 2 tablespoons butter
- 1 packet (1 ounce) ranch seasoning mix
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- ½ teaspoon black pepper
- ½ teaspoon smoked paprika (optional)
- ½ cup chicken broth or water
Instructions:
- Cook the potatoes: In a large skillet or pot, melt the butter over medium heat. Add the baby potatoes, season with garlic powder, onion powder, black pepper, and smoked paprika. Sauté for 5 minutes.
- Add liquid: Pour in the chicken broth or water, cover, and let simmer for about 10–15 minutes until the potatoes are fork-tender.
- Cook the green beans: Add the trimmed green beans to the pot, sprinkle the ranch seasoning mix over everything, and stir well. Cover and cook for another 8–10 minutes until the green beans are tender but still vibrant.
- Add bacon: Stir in the crumbled bacon, mix well, and cook for another 2 minutes to combine flavors.
- Serve & enjoy! This dish is delicious on its own or as a side for grilled chicken, steak, or pork chops.
